Notice that the espresso window straddles the boundary between soft and moderately hard: espresso wants less mineral than a general household would call normal, but more than none.

Scale is not a cosmetic problem. Calcium carbonate deposits preferentially on the hottest surface, which is the heating element, and it is a thermal insulator. An insulated element has to run hotter to deliver the same water temperature, which shortens its life and destabilises brew temperature along the way. In a thermoblock or thermojet the water path is a narrow channel through a metal block, so scale reduces the cross section directly and flow rate falls. That is why a thermoblock machine on hard water can become uneconomic to repair while a large brass boiler on the same water merely needs cleaning.

How do you convert between ppm, grains, German and French degrees?

Four scales are in common use and they all describe the same thing. Milligrams per litre and ppm are identical. One grain per gallon is 17.1 ppm, one German degree is 17.8 ppm, and one French degree is 10 ppm. Test strips sold for espresso machines often report in German degrees, while American water reports usually use grains.

How do you find out what your water actually is?

Test it, do not look it up. Municipal reports give an average across a supply zone, and hardness at your tap can differ substantially because of blending between sources, the age of the pipes, and whether the building has its own treatment. Alkalinity buffers acid, so high alkalinity water makes espresso taste flat and chalky no matter how well you dial it in, and very low alkalinity leaves the water aggressive toward metal. For most people the practical answer is one of three. If your tap tests between roughly 50 and 100 ppm, use it with a carbon filter to remove chlorine, since chlorine tastes of swimming pool in a short drink. A carbon pitcher does that job and reduces hardness slightly, which is a partial answer rather than a complete one. If your tap is above roughly 120 ppm, stop trying to solve it with descaler. How often should you descale at your hardness?

Descale interval is a function of hardness and volume, because scale accumulates per litre of water heated rather than per day of ownership. Light use below is roughly two drinks a day, medium four to six, heavy eight or more.

Use a descaler formulated for espresso machines, such as Durgol Swiss Espresso , and check your manual before reaching for household vinegar: many machines have aluminium in the water path, and aluminium and acetic acid are a poor combination. Descaling is not the same job as backflushing. Descaler removes mineral scale from the water path, while a detergent removes coffee oils from the group. Doing one does not do the other. Two safety notes worth repeating. Descaling solution is a chemical, not a food product: rinse the number of tank-fulls your manufacturer specifies, not fewer. And never run a descale cycle through a machine with a bone-dry boiler or with the steam valve closed, since these machines combine mains electricity, pressurised water and steam above boiling point.

Does water hardness change how espresso tastes?

Yes, and the effect is larger than most people expect. Magnesium in particular binds to flavour compounds during extraction, so water with almost no magnesium extracts less and produces a thin, hollow cup even when the recipe is correct. That is why distilled water, which cannot scale a boiler at all, is still the wrong answer: it makes bad coffee and it is corrosive.

Alkalinity is the other half. Coffee is acidic, and carbonate buffers acid, so high alkalinity water flattens the brightness that a light or medium roast is supposed to deliver. If your espresso tastes dull and chalky at every grind setting and the machine is clean, alkalinity is a stronger suspect than the beans. Very low alkalinity swings the other way and produces sharp, aggressive acidity, which is why a target near 40 ppm is quoted rather than zero.
