What do the four specifications in these tables decide?

Boiler type decides workflow. A single boiler heats to brew temperature, then has to climb to steam temperature for milk and cool back down for the next shot, so everything happens in sequence. A dual boiler holds both temperatures at once. A heat exchanger gets simultaneous operation from one boiler at the cost of a short cooling flush before the first shot. A thermoblock or thermojet stores almost no hot water at all, which makes it very fast to heat and thin on reserve across a run of drinks.

Portafilter size decides your accessory market. The commercial standard is 58 mm, and every precision basket, calibrated tamper, distribution tool, puck screen and bottomless portafilter is made in that size first. At 54 mm the market is smaller but healthy; at 51 mm it is noticeably thinner. Super-automatics have no portafilter at all, which is the defining tradeoff of that category.

PID temperature control holds brew water within about a degree of a set point instead of letting a thermostat swing several degrees either side. It matters most on light roasts, where a small temperature change moves a shot between sour and sweet. Its absence is not automatically a fault: the Gaggia Classic and the base Rancilio Silvia both ship without one, and both have large communities fitting aftermarket kits precisely because everything else about them is worth the effort.

What is the single most important espresso machine specification?
